This post is mainly for you Amanda, to prove that i am trying new recipes and actually cooking for once. Nate's work has been so overly nice to him (to the point that someone took him to lunch every day last week) that he wanted to repay their kindness. Nate enlisted me to make them a little treat. I decided on one of my childhood favorites... Zucchini bread!

Here is the Recipe:
3 eggs
2 cups of sugar
1 cup of vegetable oil
2 t. vanilla extract
1 t. grated lemon peel
3 cups of flour
1 t. baking soda
1 t. salt
1 t. ground cinnamon
2 cups of shredded Zucchini (try to find the small ones because they have more flavor)
1/2 cup of chopped nuts (your choice)

In a large mixing bowl, combine eggs and sugar. Beat in oil, vanilla, and lemon peel. Combine the dry ingredients; gradually add sugar mixture and mix well. Stir in zucchini and nuts. Pour into two greased loaf pans. Bake at 325 for 55-60 minutes. Cool for 10 minutes in the pan before removing to the rack.....and then ENJOY!
